Well on my site, we only have the one. I chose this way because it's more uniform and professional looking. Also, it makes it much easier to watch over for broken images, links, etc.

Yeah I am considering doing this too, I want a real clean professional look but the members love to be able to choose.

I don't think it hurts having the same forum skin but maybe in 2/3 different colour schemes, so you can give users a little customisation while still keeping one image.
I usually leave the default vBulletin skin as an option too, but aside from that just the one skin (possibly in multiple colours)

I currently only have one, for reasons such as the time it takes to change the logo and everything to make it match.

If I was to have more, then I would probably just add different coloured version of my current skin.
