If Trademark is not an issue ( I don't know) I would vote for apple-forums.com

If Apple got after you, you could always convert to a forum about the different variety of apples you eat.

For SEO, you should stick to the name Apple Forums. Along with the domain, you should do pretty well in the SERPS.

As for trademarks, etc, IANAL, as long as you've got a disclaimer saying that you are an unofficial site that is unaffiliated with Apple Inc and nothing posted is the opinion of Apple or something along those lines, you should be fine.
