Reset Demo after X hours.

How do you set up a demo forum software, but either keep it as a "dud" So as in, any setting will be forgotten a few minutes after input. Or the board reverts itself to a default clean installation every 1-2 hours. I am needing to learn how to do this for my site with demo's of software. I simply can't be bothered re-installing or re-uploading a database every few hours.

Depends on the software, most things are stored in the DB for SMF, you can also use a cron to do a cp of the files from a known "unaltered" set.

Could i like have /phpbb and then /phpbb/clean
Then whilst deleting the database, getting a cron to delete /phpbb and copy the fresh files from /phpbb/clean to /phpbb?

Well, if you had phpBB - all the settings are in the db. What you'd do is just make an sql script which deletes the tables and makes them.

I'd also edit the admin template so that users couldn't edit vital functions.
